An omelet for supper is a perfect end-of-week meal when the refrigerator is bare. All you need are a few eggs and some leftovers. And though puffy French omelets are impressive, and those incredible breakfast hulks served in this country are awesome, I prefer a less ostentatious Spanish omelet. Even though it's called a Spanish tortilla, there's little resemblance to Mexico's flatbreads. Rather, it's a cousin of the Italian frittata. Made with potatoes, eggs and onions, it's an integral part of most tapas menus.

Peanut butter and jelly sandwich (25 cents), Cucumber and carrot salad (8 cents), Hardboiled egg (11 cents), Milk (45 cents). With milk prices so high, it's tough to get the high-nutrient beverage in a packed lunch for under $1, but we managed to do it here. Hardboiled eggs, a great source of cheap protein, help offset the milk cost.  Krieger also used a "buy one get one free deal" at Publix in order to get a deal on the bread for the peanut butter and jelly sandwich.

On the egg casserole - oh boy, it was a recipe for one of those bread casseroles - but I used potatoes because I forgot to get bread. I also use spinach and saute some veggies like peppers or onions if I have them. I think all a person needs to do an egg casserole is to saute some vegetables, mushrooms or whatever. I use sausage because there are lots of Brokerings at the table and they like meat, but it is not necessary.

With the extended heat wave we've been having, I like to keep my time in the kitchen to a minimum which is why I keep about a dozen hard boiled eggs along with the fresh eggs in the refrigerator.
