A Brief History of Eggnog
December 21, 2011
While culinary historians debate its exact lineage, most agree eggnog originated from the early medieval Britain "posset," a hot, milky, ale-like drink. By the 13th century, monks were known to drink a posset with eggs and figs. Milk, eggs, and sherry were foods of the wealthy, so eggnog was often used in toasts to prosperity and good health. Eggnog became tied to the holidays when the drink hopped the pond in the 1700s.

Christmas breakfasts: Strata with sausage, cheese and herbs
December 20, 2011
One dish that works well for easy Christmas breakfasts is casseroles or stratas. These egg dishes are typically made with a mix of cheese, chopped vegetables, bread and sometimes cooked and crumbled sausage. The bread is either cubed or in slices and can be almost any variety - just try not to use a heavy bread because you want the casserole to puff up when baked.

Christmas breakfast: Crème Brûlée French toast
December 20, 2011
A super simple make-ahead dish is French toast that bakes in the oven in syrup. It takes just minutes to put together, and you can bake it immediately or cover it and refrigerate it overnight and pop it in the oven in the morning. Serve with additional syrup and sliced fruit or berries. Having these dishes ready to toss in the oven on Christmas morning is a cook's best friend. Many grocery stores are open until 5:30 or 6 p.m. this evening so there's time to run out for eggs, bread and milk.

Freezer Eggnog French Toast is a no-mess, no-stress dish
December 20, 2011
Soaking slices of bread in spiced eggnog batter days before it will be served and storing them in the freezer makes French toast a convenient option for serving at a holiday breakfast or brunch. A baking pan or two of eggnog-saturated bread slices sending spicy holiday aroma through the house is much more inviting than the smell of bread cooking in burning butter on the stove and much more efficient for feeding a group than frying one or two slices at a time.

Eggs: Yes, egg yolks contain cholesterol, but medical and nutrition experts now stress that saturated fats and trans fats raise blood cholesterol more than dietary cholesterol. Plus, eggs are a good source of nutrients. One egg contains 6 grams of perfect complete protein. Eggs are also good sources of choline, which has been linked with preserving memory, and lutein and zeaxanthin, which may protect against vision loss from age-related macular degeneration.

Egg producers offer several holiday recipes
December 14, 2011
Eggs are a versatile food that may be eaten alone, used to create entire meals and in holiday baking recipes. Jerry Wilkins of the Colorado Egg Producers Association said, "The holiday season rivals Easter in terms of egg sales because people are baking more and cooking for holiday guests. It's also the season of giving. Local farmers are dedicated to helping those in need who don't know where their next meal will come from. Eggs are a powerhouse of nutrition but are often overlooked as a great source of nutrition and work well for families on any size budget."

Tips for hosting a holiday brunch
December 14, 2011
By Joe Crea
If you're looking for ways to gather your friends, stretch dollars and make the most of your limited time, a holiday brunch might be the way to go. While most of the prime party times are already booked, mornings tend to be more flexible, especially on weekends. Depending on your style and your crowd, breakfast or late-morning gatherings are perfect for a leisurely get-together. Planned sensibly, an early-day party can be more affordable, too. Eggs, sausages and other breakfast proteins are less expensive than the cuts of meat you'd usually turn to later in the day.

What's in your kitchen?
December 13, 2011
By Anahad O'Connor
What's in your refrigerator? There's a good chance that residing somewhere on its shelves is at least one carton of eggs and a block of Cheddar cheese. Those are among the findings from the NPD Group, a market research company, which every three years publishes a massive report revealing the most common items Americans stock in their kitchens, as well as their recipe and cooking habits. This year the group interviewed a broad range of people in nearly 3,000 households around the country. The report found that nearly 9 out of 10 households always keep eggs in the kitchen, while almost 6 out of 10 always have Cheddar cheese and yogurt on hand.

Holiday brunch - strata
December 9, 2011
This is my new favorite holiday brunch entree. Not that it is strictly for the holidays, because, really, it is just a breakfast. But since holidays tend to involve more entertaining, I thought that this would be a good "holiday" brunch. And really, this is a meal that can be eaten for lunch or dinner too. So it's not just for breakfast either. Maybe the title should just be "food"? Moving along....this egg strata is delicious. It's an egg dish, but it uses bread, which gives the dish a kind of custardy feel.

How to poach an egg
December 6, 2011
My best friend was in town from Los Angeles over the weekend, and one of the first things she did when she saw me was to proudly proclaim that she had set a cooking goal for herself. "I love poached eggs at brunch, so it's time I learned how to make them at home," she said. Instead of going out on Sunday, we stayed home and made poached eggs with blender hollandaise and prosciutto. For some reason, poached eggs developed a reputation for being difficult to make, but really, the process is easier than waiting in line at a popular city brunch spot.

Eggs: Superfood, not superfat
December 4, 2011
By Dana Artinyan
Let me set the record straight here. Eggs are a wonderful, natural, healthy, dare I say superfood. Here's why: Relatively low in calories (70 calories a pop), vitamins and minerals that promote eye health, brain functioning, fetal growth and development, and muscle retention, aid in weight loss or maintenance because of their high protein content (see below). They will certainly NOT make you fat.

When I used to get breakfast at McDonald's, my choice was always the sausage biscuit sandwich. This is a take on that sandwich, but with bacon instead of sausage, and in a convenient cup form.

10 key nutrients and how to get them from your food
December 2, 2011
By Molly Kimball
Eggs are one of the top food sources of choline, but this is one instance in which the low-fat, protein-rich whites aren't best. It's actually the yolks that are packed with choline, with about 116 mg per yolk. (A single ounce of cooked beef liver has about 117 mg of choline, but how many of us eat liver on a regular basis?)

The nutrient that improves your memory
December 1, 2011
By Cassie Shortsleeve
Research from the USDA has also shown choline lowers blood levels of the amino acid homocysteine-which, when present in high levels, can lead to heart disease, cancer, and dementia. Extra choline also helps in constructing the "memory" neurotransmitter (acetylcholine). Eggs, chicken, and seafood are three good choline sources. One large egg contains about 125 milligrams (mg) of choline, while 3 ounces of chicken can contain between 200 and 300 mg (the USDA recommends 550 mg a day).
