Pea Fritters

These pea fritters are quick to whip up and super versatile. Adults can enjoy them with a poached egg on top, and for the little ones, slice into strips and serve with Greek yogurt dipping sauce.

INGREDIENTS:

4 cups frozen peas
4 large eggs
1 ¼ cup all-purpose flour or whole wheat flour
1 tsp. baking powder
3 Tbsp. avocado oil or coconut oil
1 cup 2% plain Greek yogurt
¼ tsp. garlic powder
¼ tsp. onion powder
1 tsp. dried thyme
Poached eggs, for adults, if desired

DIRECTIONS:

1.) Place peas in a microwave safe bowl. Cover with enough water to submerge peas and microwave 1 minute, until tender. Drain water.

2.) Place peas, eggs, flour and baking powder in a blender. Blend until combined.

3.) In a medium skillet, add oil. Once warmed, drop about 1 tablespoon of pea mixture into skillet at a time. Cook 2-3 minutes on each side, until golden.

4.) In a small bowl, combine yogurt, garlic powder, onion powder and thyme.

5.) Serve pea fritters with Greek yogurt mixture. For adults, top fritters with a poached egg, if desired.

6.) Refrigerate leftovers up to 3 days.
