Poultry giant JS West shows off larger chicken cage

In the parking lot of Merced High School, about 25 students gather around a metal cage filled with rubber chickens. The teenagers -- some wide-eyed, others sporting glazed looks -- listen as C.J. Brantley, spokesman for poultry giant JS West Milling Co., describes the cage. "This is a scaled-down model of our commercial barn," he tells the teens. "As you can see, there's plenty of space to move. They can move around. They can move in every direction."

Many foods are rich in vitamin D. If you're a person who thinks everything tastes better with bacon, here's the excuse you've been waiting for: lard from free range pigs is very high in vitamin D. Other foods to consider are salmon, mackerel, tuna in oil, fish roe, oysters, herring, eggs, beef liver and mushrooms. Unpasteurized milk is also a source of vitamin D; however raw milk can pose other health problems. Be careful.

It doesn't matter how gruesome the workday has been or how late it is when I get home. Give me a couple of eggs and some of this and that from the fridge, and I know I can fix a meal that will not only get me through the night, it will even redeem the day. Yet it seems like every time I mention eating eggs for dinner, I get met with a blank look - "Dude? You don't know those are for breakfast?" - or even worse, pity - "So, at long last it's come to this, has it?"

There is no limit how eggs can be used. I like to have hard-cooked eggs ready for a snack or to slice onto a salad right out of the refrigerator. We often break one into a bowl, stir into the yolk and cook it in less than a minute in the microwave for a quick egg sandwich. Frittatas are a good way to use eggs and include almost any other ingredients.

We were talking about different childhood memories that each of us had. She said she remembers eating Egg in the hole for breakfast as a child. I said that I remember my Dad making that for us too; but we called it Toad in the hole. At that time, a couple more ladies came and joined our conversation. One called it Birdies in a nest and the other called it Pirate Eye Eggs. When I got back home, I did some research because I thought it was so funny how the 4 of us were talking about the exact same recipe and all of our families called it something different!
