Nutrition myths: Fact or fiction? Part 2
October 19, 2011
By Anita Marley
Myth: Eating eggs raises your cholesterol level. Fact: Although eggs do contain cholesterol, it appears that saturated fat intake is the biggest culprit in increasing cholesterol levels. Saturated fat is found in things like meat and dairy products (full fat milk, cheese, butter). Limit your egg intake to no more than one a day, eat low-fat dairy products, limit your meat portions and butter use to help keep your cholesterol level in check.

Chat leftovers: The un-quiche

You say crustless quiche, I say frittata. When you think about it, they're not all that different, right? Like quiches, frittatas are versatile and adaptable to many ingredients, but without the high dairy content. So they're less high in fat. They're great for entertaining; you can often make them a little ahead of time and serve at room temperature.

Then: Yolks were considered tiny cholesterol bombs. Now: Numerous studies, including one in a 2011 issue of the European Journal of Clinical Nutrition, have debunked the link between eggs and heart disease. Although a single yolk contains nearly the recommended daily limit for dietary cholesterol, it is the most nutrient-rich part, packed with zinc, iron, vitamins A and D, and choline, which may help reduce breast-cancer risk. Plus, the yolk contains nearly half of an egg's hunger-quashing protein, which is why white-only omelets aren't as satisfying.

Egg recipes and World Egg Day
October 14, 2011
By Lynn Walls
It is no secret that I love eggs. There are not many things that I can serve my family as filling and inexpensive as eggs. They make a great frugal source of protein and we eat them often. Yesterday, I read on the Incredible Edible Egg Facebook page that today is World Egg Day. Yes, the second Friday of October is World Egg Day. I had planned on posting my tater tot nacho recipe, but I changed things up and will save my tater tot nachos for next week. Today, we are going to focus on the eggs.
